I can't believe another year is coming to an end. It feels like 2011 just started and I was making resolutions for the year, but I guess not since I can only remember one of my resolutions. I started the year with the plan to start eating healthy and working out more to lose weight. Now that the year is over I did lose a total of 15 lbs over the last year despite having several setbacks with injuries and wanting to give up a few times. The new year is about to begin and I have started thinking about what my resolutions or goals will be for 2012. First, I would like to continue eating right and working out to lose some more weight. I have about 39 more pounds to lose to get to my goal weight. Secondly, I want to get myself more organized in different areas of my life. Lastly, I am wanting to find ways and implement them to help save my family some money. One idea I have is to start making my own cleaning supplies. Hopefully this time next year, I have been able to accomplish these things.

Cinnamon French Toast Bake
Christmas morning I thought it would be nice to have a special breakfast. I found a recipe for this Cinnamon French Toast Bake made with cinnamon rolls which are loved by my children. I made it just like the recipe below but left out the pecans, and it turned out delicious. We will definitely be having this again, and there was enough for us to have it for breakfast twice.
Cinnamon French Toast Bake
Ingredients
- 1/4 C. butter or margarine, melted
- 2 12.4 oz. cans Pillsbury Refrigerated Cinnamon Rolls with Icing
- 6 eggs
- 1/2 C. heavy whipping cream
- 2 tsp. ground cinnamon
- 2 tsp. vanilla
- 1 C. chopped pecans
- 1 C. maple syrup
- Garnish:
- Icing from cinnamon rolls
- Powdered sugar
- 1/2 C. maple syrup, if desired
Directions
Heat oven to 375 degrees. Pour melted butter into ungreased 13x9-inch (3-quart) glass baking dish. Separate both cans of dough into 16 rolls; set icing aside. Cut each roll into 8 pieces; place pieces over butter in dish. In medium bowl, beat eggs. Beat in cream, cinnamon and vanilla until well blended; gently pour over roll pieces. Sprinkle with pecans; drizzle with 1 C. syrup. Bake at 375 degrees for 20-28 minutes or until golden brown. Cool 15 minutes. Meanwhile, remove covers from icing; microwave on Medium (50%) for 10-15 seconds or until drizzling consistency. Drizzle icing over top; sprinkle with powdered sugar. Hello, I am Tracy! I am a stay at home mom to M (4 years old) and A (3 years old). For the last year I have been planning to start my own blog to share about all the fun and crazy things that happen in my life staying home with my two kids, and finally have gotten around to it. Before staying home I was a Pre-K teacher and before that was an assistant director of a daycare.
