Meatball Sub Casserole


Yum, Yum! Last night we tried a new recipe called Meatball Sub Casserole.  I would rate it a 4 out of 5 with 5 being the best.  I will share the recipe with you in a second, but if I make it again I will make some changes.  The meatballs would be a little smaller, and I would add some more seasoning to them. 

Meatball Sub Casserole - makes 6 servings

1/3 cup chopped green onion
1/4 cup seasoned bread crumbs (add more next time)
3 T grated Parmesan cheese
1 pound ground beef (probably could use a little more and I use ground turkey)
1 loaf Italian Bread, cut into 1-inch slices ( I didn't need the whole loaf)
1 package (8 ounces) cream cheese, softened
1/2 cup mayonnaise
1 tsp. Italina seasoning
1/4 tsp. pepper
2 cups shredded mozzarella cheese
1 jar (28 ounce) spaghetti or marinara sauce
2 garlic cloves, minced

In a bowl, combine the onions, bread crumbs and Parmesan cheese.  Crumble beef over mixture and mix well. Shape into 1-inch balls: place on a greased rack in a shallow baking pan.  Bake at 400F for 15-20 minutes until no longer pink.
Meanwhile, arrange bread in a single layer in an ungreased 13 x 9 inch baking dish.  Combine the cream cheese, mayonnaise, Italian seasoning and pepper: spread over the bread.  Springkle with 1/2 cup mozzarella.
Combine the spaghetti sauce and garlic: add meatballs.  Pour over cheese mixture: sprinkle with remaining mozzarella.  Bake, uncovered, at 350F for 25 minutes or until heated through.

  2. My husband loved the Meatball Sandwiches he used to get at Subway, and I thought this might be a nice alternative which he loved.
